Snack healthily with these delicious banana and oatmeal cookies!
Ingredients & Method:
- 2 ripe bananas
(Tip: Use bananas that look a bit overripe and you don't fancy eating as they are anymore. The riper the bananas, the better they mash and the sweeter they taste.)
- 1 cup of oatmeal - 1 tsp of vanilla extract
- Optional: a handful of pecan nuts or other nuts you like. You can also add currants or dried berries.
Preheat the oven on 180°C (356 °F).
Break up the bananas and mash them with a fork in a bowl so they are nicely pureed.
Add the oatmeal to the bananas bit by bit stirring them in and making sure that all the oatmeal is well covered with banana and everything is mixed together properly.
Break up the nuts in small pieces.
(You can wrap the nuts in a piece of cloth or kitchen role and smash them with a rolling pin or another hard object until they are broken up into small pieces.)
Add the broken up nuts and the vanilla extract to the oatmeal-bananas mixture and stir everything thoroughly.
Put some baking paper on a baking tray and divide the mixture in equal dollops on the tray.
Slide the tray in the preheated oven and let it bake for 15-20 minutes. (Start keeping an eye on them after 15 minutes, depending on your oven, they’ll be ready or can take another 5 minutes until nice and golden brown)
Take the cookies out of the oven and let them cool off.
When cool, or lukewarm you can enjoy these healthy snacks on their own or with some yogurt. They will keep a few days in a plastic container.
